You will need: 2/3 cup olive oil, 1 cup Slightly concentrated tomato juice, 2 cups water (for the pot) or 1 cup of water (for the pressure cooker), salt and pepper
In a pot: Heat half the olive oil over low heat and sauté the contents of the package for 5-7 minutes. Turn up the heat, add salt, pepper, slightly concentrated tomato juice, the remaining olive oil, and 2 cups water and mix gently. As soon as it comes to a boil, cover the pot, turn the heat down by half and simmer for about 30 minutes.
In a pressure cooker: Follow the recipe as described above, but use half the amount of water (1 cup). Put the lid on the pressure cooker and once the valve rises, turn the heat down by half and let it simmer for approximately 10 minutes.
